I made these shells for meatless Monday a while back! For those not familiar I try to go vegetarian at least 3 days a week. Sometimes I fail but I enjoy the challenge of trying new recipes without meat in it.
Cheese Stuffed Shells
The positive: It’s meatless, easy to make and it taste good!
The negative: It’s time consuming to make since it requires you to first cook the shells then bake. It’s also not a filling meal on its own.
Overall, it’s worth making and the great thing is you can adjust the recipe depending on how many people you are cooking for!

Calories per serving: 440
8 ounces, jumbo shell pasta
15 ounces Ricotta cheese
2 cups mozzarella cheese
¼ cups Parmesan cheese
1 ½ tablespoon dried parsley
½ teaspoons ground nutmeg
2 cups marinara sauce
In a large pot of boiling water, cook shells until al dente. Drain and rinse under cool water to stop the cooking process.
Mix together the ricotta, mozzarella, Parmesan, parsley, nutmeg, and egg in a medium bowl.
Stuff each shell with about 3 tablespoons of filling, until full. Lay 1½ cups of marinara sauce on the bottom of a 9×13 baking dish. Place each stuffed shell on top of the marinara. Cover the shells with the remaining ½ cup marinara to keep the shells moist while baking. Bake at 350ºF for 25-30 minutes.
