The other night I had this crazy idea to make Chad chicken nuggets. Okay, not crazy because he asks every night for homemade nuggets.However, I felt like switching it up and instead of dipping the chicken in olive oil I dipped it in bbq sauce. I thought it could taste like something up Chad’s alley. Turns out I was right although he did say it was a little weird. haha. If your looking to spice things up then this is the recipe for you!
- 16 oz (2 large) skinless boneless chicken breasts, cut into even bit sized pieces
- salt and pepper to taste
- 2 tsp bbq sauce
- 6 tbsp whole wheat Italian seasoned breadcrumbs
- 2 tbsp panko
- 2 tbsp grated parmesan cheese
- olive oil spray
Put the olive oil in one bowl and the breadcrumbs, panko and parmesan cheese in another.
Season chicken with salt and pepper, then put in the bowl with the olive oil and mix well so the olive oil evenly coats all of the chicken.
Put a few chunks of chicken at a time into the breadcrumb mixture to coat, then on the baking sheet. Lightly spray pan with olive oil spray and cook chicken. Turn chicken every few minutes till it is cooked through
