So when I stumbled onto this recipe I was intrigued. I recently bought a new basil plant and thought this sandwich would make a perfect opportunity to use some of my new basil. I bought some Italian herb bread since the store I was at didn’t have baguettes like the recipe called for. It was super easy to make and the ingredients combined gave it a lot of flavor. I really enjoyed the sandwich it took about 7 minutes total from prep time to cook time. Since the sandwich was large I cut it in half and added turkey slices to one of the paninis which was a great addition as well.
I used my panini press to make this recipe but to view the recipe making it on the stove please visit http://www.meatlessmonday.com/apple-basil-paninis/
Apple Basil Paninis
- 1 tablespoon canola oil
- 2 small baguettes, sliced in half
- 2 tablespoons Dijon mustard
- lowfat mozzarella cheese
- 6 basil leaves, cut into chiffonade
- 1/2 apple, thinly sliced
Spread the mustard evenly between both halved baguettes. Layer the mozzarella, basil leaves and apple slices on the bottom side of each baguette. Close the sandwich with the top halves.
Cook on panini press for about 3-5 minutes or until cheese has melted.
Cut each sandwich in half, serve one sandwich per person and enjoy!
