Barbecue Chicken Calzones

Tonight was a reminder on why I’m attempting to cook and not a chef. I have been semi excited for the bbq chicken calzones. I had to push it back last week because I didnt have any bacon (turkey) for the meal. The prepping is slightly time consuming since I had to cook turkey bacon for me, regular bacon for Chad, grill chicken, and cook onions all separate from each other (ah the lifestyle of a picky eater). We also learned how many people/items it takes to open a tube of biscuits. The answer? 2 people and a can opener. It was a sad night in our house. lol. 

Anyways, so I bought a 6 pack of biscuits since its just the two of us. However, I did not take into consideration size. The comical part about this whole meal is they came out bite sized because the biscuits I bought were small. The verdict was despite it’s small size it is still full of flavor. This meal we will have to try it again with normal size biscuits. Chad and I had a good laugh over the size so that’s good at least. It was also a reminder that I’m still a beginner in the kitchen.

The Recipe


6 slices of bacon
1 Tbl. Olive Oil
1/2 small onion, chopped
3 cups shredded, cooked chicken breast meat
1 bottle of barbecue sauce
1 can refrigerated biscuits
1 cup shredded mozzarella cheese
2 tablespoons chopped fresh cilantro (optional)


  1. Preheat the oven to 400 degrees F (200 degrees C).
  2. Fry bacon in a large skillet over medium-high heat until crisp. Remove from the pan to drain on paper towels; crumble. Add the onion and shredded chicken to a pan with olive oil. Saute over medium heat until onion is tender. Stir in 1/2 cup of barbeque sauce, and remove from the heat. Mix in the cooked bacon.
  3. Flatten out biscuit dough out onto a greased cookie sheet. Press out to an even thickness.  Spread a small amount of barbecue sauce on each biscuit (about 1 tsp.) Divide the chicken mixture between the biscuits, spreading on only half of each piece to within 1/2 inch of the edge. Sprinkle the cheese and cilantro over the top. Fold each biscuit in half and press the edges together with a fork to seal.
  4. Bake for 12-15 minutes in the preheated oven, or until browned to your liking. Cool for a few minutes. These can be served with additional barbecue sauce if you like.
