Grilled Chicken Rosemary with Roasted Parmesan Potatoes

So I was pretty excited for tonight’s dinner. Anything with lime in it typically gets me pumped up to eat in general. So I’ll start with the grilled rosemary chicken. It turned out really good. The one thing I haven’t perfected the art of is keeping seasoning on chicken. Sadly the rosemary and green onion did not stay on the chicken as it was cooking which was unfortunate. However, the chicken was full of flavor. I added minced garlic and pepper to the marinade also. 

The potatoes turned out amazing. I loved the flavor of the seasoning. They were super easy to make and I discovered if you switch regular potatoes for red potatoes they bake so much quicker! 

This recipe is a keeper it’s full of flavor and tasted like something I could get at a restaurant (not sure which one but it was resturant tasting quality!)

Grilled Rosemary Chicken Recipe


  • 1/3 cup vegetable oil
  • 3 tablespoons lime juice
  • 3 tablespoons chopped green onion with green
  • 1 tablespoon chopped parsley
  • 1/2 tablespoon chopped fresh rosemary leaves, or 1/2 teaspoon dried rosemary
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 broiler chicken, about 3 1/2 pounds, quartered
  • 4 rosemary sprigs
  • 1 lime, cut into 4 wedges


In a shallow baking dish, combine the vegetable oil, lime juice, green onion, parsley, chopped rosemary, salt and pepper.Add the chicken quarters, turning them all sides are well-coated with marinade.  Place the chicken on the grill (or I cooked on the stove) about 4 inches above the coals and cook them for about 12 minutes, brushing frequently with the marinade. Serve with lime wedges.Parmesan Roasted Potatoes


4 medium Russet Potatoes, washed skin on diced

1 Tbsp. olive oil

3 Tbsp. grated parmesan cheese

2 tsp. dried parsley

1 tsp. paprika

1/2 tsp. garlic powder

1 tsp. salt


Preheat oven 450 degrees. Spary sheet pan with cooking spray. Slice potatoes in half then cut into half inch cubes. Place potatoes in a medium bowl and toss with oil. Combine parmesan, parsley, paprika, garlic powder, salt, and cayenne pepper in a small bowl. Add Parmesan mixture to potatoes. Toss to coat evenly. Arrange Potatoes on baking sheet. Bake, turing once until potatoes are lightly browned and easily pierced with a knife, about 25 min.
