So we just went grocery shopping on Sunday and spent a ton so I promised we’d have two week worth of meals. Excited to cook? Not so much but its a good reason to keep making new recipes. Tonight I made us parmesan crusted chicken which actually had a kick to it and I’m not sure why because there was nothing spicy in the recipe. However, I thought it was full of flavor. The baked garlic fries I was actually really excited about because the actual recipe has them as baked garlic cilantro fries. However, I was so hungry that I didn’t feel like adding cilantro to the fries after they baked. haha. The meal is a keeper and was full of flavor. Sadly the only downside to this meal is it didn’t fill me up so then I proceeded to shove anything easy into my mouth haha.
Parmesan Crusted Chicken

Ingredients
Lay chicken breasts on baking sheet (I line my baking sheet with parchment paper to make clean up easy) and spread yogurt evenly atop each the chicken
Next mix bread crumbs and cheese together and top on each piece of chicken
Place in oven and bake for 20 minutes or until chicken is cooked thoroughly and juices run clear.
baked garlic cilantro fries
Ingredients (2-3 servings)
- 5-6 yukon gold potatoes, cut into thin fries
- 2 Tbsp olive oil
- 1/4 – 1/2 tsp garlic powder
- 1/2 – 3/4 tsp sea salt
- pepper
- 1/4 c. loosely packed cilantro leaves, finely chopped
Instructions
Preheat the oven to 425 degrees, and get a baking sheet with rack ready (if no rack, just line with foil/parchment paper and drizzle with olive oil. Cut the potatoes into fries and place in a bowl of cold water to soak for a few minutes.
Drain the water and dry the fries with paper towel. Once dry, toss the fries with the olive oil, garlic powder, salt and pepper.
Lay on a baking sheet in a single layer, preferably one that has a cooking rack so the fries can have the air circulating all around them (and no need to flip.) Bake for 20-25 minutes depending on your oven and how crispy you like your fries. If using a baking sheet without a rack, halfway through the cooking time, flip the fries.
Once done, toss fries with cilantro in a bowl.
